Lazy Eggs on a lazy Sunday morning…. 

Today I made lazy eggs, and they were divine - Simple, easy to make, bursting with flavour. There are tons of recipes on the internet, mine was pulled from a Sunday supplement many years ago and works every time. A great little dish if you’ve friends staying, as you can prepare in advance with minimum effort.

 As I adore parmesan I add a little extra sprinkle inside the ramekin dish, but if you’re looking to cut calories - don’t, and consider excluding the cream. Don’t eat meat? Substitute smoked salmon for the ham, use dill instead of chives and leave the rest as is.

 Serves 4:

Cooking time: 15 minutes 

A little softened butter

8 slices Parma ham

4 free-range eggs

8 tbsp double cream

2 tbsp chopped fresh chives

4 cherry tomatoes

4 tbs freshly grated Parmesan

Toasted bread triangles, to serve

 1.   Preheat the oven to 200C/400F/Gas Mark 6. Butter the insides of 4 x 200ml capacity ramekin dishes and line each with 2 slices of ham.

2.    Carefully break an egg into each one and add the cream and chives. Pop a tomatoe on top of each one. Sprinkle with gated parmesan.

3.    Bake for 12-15 minutes or until the eggs are just set and the tomatoes softened. Serve with toast. 

Tip… 

It’s worth investing in some Artisan bread to toast. Pour some freshly squeezed orange juice and prepare a steaming pot of rich roast arabica coffee. Enjoy.
