Eat, Toast, Dunk

Recently whilst browsing the shelves at Selfridges, I came across the most amazing marshmallows.  ‘Eat Toast Dunk Me’ marshmallows are gourmet treats for adults, delicious little cubes of loveliness, I have never tasted a mallow so yummy. With a range of grown up flavours including Rosewater and Cardamom, Rhubard & Custard, Toffee Apple and Chocolate, and seasonal flavours that are sure to return, include Pumpkin Spice and Wild Cranberry.

Created by Hampshire Food Company, Copper and Cane, they are made with all natural ingredients, Fairtrade sugar and no artificial colours, flavours or preservatives. The marshmallows are made to a special recipe to ensure the perfect combination of taste and texture to eat, toast and dunk”.

I chatted with Founder, and Director of Copper and Cane Hazel Wright and she shared her delightful story.

 “I've been a foodie as long as I can remember and I was in heaven when I discovered you could actually do a degree in Food Science! I graduated and followed a wonderful career in the food industry working for Nestle, Mars etc. that took me all over the world, from teaching Coffee Schools in Japan to running R&D departments in the UK & USA. I loved working in the food industry, but I longed to create my own product and so in late summer 2013, I made my first batch and was hooked. I set up Copper and Cane Ltd (I'm the Copper, the sugar is the Cane), makers of “Eat Toast Dunk Me” natural artisan marshmallows  I developed a recipe that gives the perfect texture marshmallow that you can Eat, Toast or Dunk. The name just stuck! Marshmallows are such fun and so accessible and they are a superb base for delicious natural ingredients to delight palates of all ages. After only 6 weeks of trading we launched in all the Selfridges stores and the rocket ride began!

 All of my marshmallow flavours are inspired by childhood memories. Rhubarb & Custard was inspired by my Grandmother who gave me my very first foodie experience at the age of 4! She got me to pull out a stalk of Rhubarb, eat it raw (imagine the face!) then stick it in a pot of sugar and repeat.... ahhh the flavour transformation! Toffee Apple takes me straight back to making a total mess of my father’s wonderful kitchen making toffee covered apples which we later used for apple bobbing. Chocolate was my first marshmallow, I wanted to create the perfect combination of dark cocoa hit and velvety mellow chocolate melt, 40 cocoas later the perfect combination was found....Yum! Rosewater & Cardamom came from Dad, again, he was the cook in the family and had us eating all kinds of 'exotica' and his spice cupboard was just a treasure trove!

I adore Marshmallow making as it is quite an involved process, every batch is a journey! I only use Fairtrade sugar and natural ingredients, with absolutely nothing artificial. All our flavours are gluten and egg free and we have lots of fantastic natural, seasonal flavours ready for 2014 including Gooseberry Fool with Elderflower, Earl Grey and Banoffee.”

I love this little company, their passion, playfulness and enthusiasm for their product. Gorgeous treats in funky packaging, these mallows are the perfect gift for all occasions. I purchased the Rosewater and Cardamom (delicate pink cubes with a pretty signature swirl) - I have yet to try them toasted. Watch this space…..
