EASY PEASY PANCAKES

Okay, that’s it; I’ve been a wee bit naughty the last few weeks (Read: a lot naughty). I’ve let a few bad eating habits creep back into my routine, so enough is enough! Phew! I feel better already, having stated that out loud.  Of course, now I’ve voiced my intention, I’ll have to back it up and get back to eating clean; and I’m starting with these - ‘guilt-free, two ingredients, gluten free, flourless and full of protein pancakes’.  Hard to believe, right?

I was given this recipe by, Bobbi Brown, Pro Make-Up Artist, Amy Conway, when we met last year, and if eating pancakes for breakfast helps you look as good as Amy does, then I’m all in.  Now I know this recipe sounds questionably simple, but don’t be tempted to add other ‘stuff.’  Trust me, you will never cook regular pancakes again.  I too was sceptical at first, but it really works, they come out fluffy, light, and delicious. The bananas make them sweet enough to just eat plain, but you can garnish them however you’d like. I serve mine with strawberries or blueberries, but just grab a handful of whatever’s in season.

Serves 2-3

1 mashed banana

2 eggs

Coconut oil for the pan

Directions:

Mash your banana with a fork. In another bowl whisk your eggs. Mix eggs & banana together (if you’re pressed for time use a blender).  Put the coconut oil in the pan (on low-medium heat).  Ladle your mixture onto the pan (the trick is to make the pancakes small, like pikelets), pour slowly and fry for about 30 seconds on each side.  If you possess the incredible skill to flip pancakes in the air, this is the time to do so. Toss onto your plate, add your toppings, and enjoy!

You could make them a bit seasonal, by adding a smidge of pumpkin pie spice, or a dash of cinnamon. This recipe is gluten free, flour free, and dairy free. It’s suitable for vegetarians (but not vegans, soz) and it’s friendly on the waistline.  Power up your metabolism, regulate your blood sugar, and satisfy your cravings for a sweet and decadent brekkie, with this tasty twist on the traditional pancake.
